Studies on the Storage Factors on the Rancidity of Soybean Oil

Abstract

|
Soybean oil were studied under four experimental storage conditions. Samples were exposed to sunlight irradiation at 30-35¡ÆC, irradiated with fluorescent light at 20-25?C, placed in the dark at 23-27¡ÆC and stored in a refrigerator at 5¡ÆC for 1 month. Rancidity development was estimated by determining the peroxide values and the free acid values of the samples at appropriate intervals and obtained results were as follow. 1. The direct sunlight showed by far the strongest oxidant activity whereas the darkness showed the weakest. 2. The high temperature showed by far the strongest oxidant activity whereas the low temperature showed the weakest.
